COOL SEASON BLOWS IN EARLY, MAKING FOR COLD KIDS!



Normally our “Cool Season” starts mid-May. This year, the cold winds hit in mid-April, causing us to make a mad dash for the market to buy sweat shirts and long pants for the 118 orphans in our care. The girls wear pajama type pants under their skirts to keep warmer. All 118 kids were outfitted yesterday, as it took us 3 days to find the proper sizes for all the kids. Anyone who has more than a few children, knows it’s not an easy task.



CONSTRUCTION MOVING AT A SUPERNATURAL RATE, NO JOKE!



THREE WEEKS AND THE DORM KITCHEN ready for its roof.

FOUNDATIONS OF BOTH BATHROOMS are done. Walls to go up this week.

The new GOAT BARN for the additional 60 goats was marked off yesterday. The fence posts and bamboo are on site for the new barn, so the digging will begin tomorrow.

The barn walls will be up in about 3 weeks with the roof scheduled for July when food buying is over.



I’ve never seen anything like it. I asked the Lord to expedite the construction and all this has happened since April 10th!!!!

God is moving things along much faster and smoother than I ever could have imagined.

CHURCHES PREPARE FOR BAPTISM, MAY 5TH.

The Pequaria church and the newly formed Namara church will hold a joint Baptism in a small lake near Pequaria next Saturday with over 22 people being Baptized.

Eric plans to get it on film for us.

The 3 Mango Tree churches also plan a Baptism that same day. Not sure how many are being Baptized but will report that next week.



WATER WELL DRILLING STARTS THIS WEEK

First well to go in will be the Naccaca village church well (donated by Butler FUMC).

The 2nd well, donated by a private citizen in Butler, PA will go in near the Balama hospital. It will be open to the public, but will also serve the hospital who’s water well went dry last November. Thanks to one of our large portable tanks, and the well we put in for the Village of Love last year, we were able to help out the hospital during their “dry days”.

Both these communities are VERY grateful for these gifts, as clean water is the key to healthier living.



On the personal side, Patches, our well known “snake finding dog”, who is mostly black in color, had 6 ALL WHITE puppies last Wed.

One of them has black spots that looks exactly like a huge paw print on its back. Eric couldn’t resist and named it PAWS!



Still no word on the final registration of our new Nissan Truck that’s sitting in Maputo.

Eric and his driving team are ready to go as soon as the government finishes the registration.

Our food bean buying license has been approved for May, so we will begin to distribute feed sacks and bringing in the bean crop.

Mounds Bars

Mounds Bars Ingredients:




10 Tbsp butter, room temperature

3/4 c light brown sugar, packed

2 1/2 c flour

... 1/2 tsp salt

28 oz sweetened condensed milk

28 oz shredded coconut

1 tsp vanilla extract

5 c bittersweet chocolate baking chunks (loosely placed in cup)



1 Preheat oven to 350° F . Line a sheet pan with aluminum foil and coat with vegetable spray.

NOTE: I use a 13x9 inch pan becasue I prefer them thicker. You can adjust the size of the pan to your preference. You can use 1/2 the recipe if you do not need as much.

In a small bowl, cream butter and brown sugar until combined. Add the flour and salt. Carefully mix to combine until it resembles chunky bread crumbs. Transfer into the prepared pan and evenly press the batter into an even layer. Bake for 8 minutes. Cool on a wire baking rack while preparing the coconut topping.

In a large bowl, combine the condensed milk, coconut, and vanilla. Spread over the crust and bake for another 20-25 minutes, until it begins to brown. Melt the chocolate over a double boiler. Stir until melted and smooth. Pour over cooked coconut bars and spread into an even layer. Allow to cool then refrigerate until hardened, about 1 hour. Cut into 36 squares.

Use a sheet pan, 13x9.

1. You will set the tone for the sexual... relationship, so don't take something away from her that you can't give back.

3. Use careful aim when you pee. Somebody's got to clean that up, you know.

5. Allow me to introduce you to the dishwasher, oven, washing machine, iron, vacuum, mop and broom. Now please go use them.



6. Pray and be a spiritual leader.

Natural head lice removal

Getting lice in the family is truly horrifying & if you don’t get rid of them ASAP, they will get into everything & literally take over. Not fun. The really important thing is to find an effective treatment that doesn”t require putting harsh chemicals onto your head, which then get absorbed into your body. Yuck. So, here is a tried & tested effective remedy to wipe out those critters in one foul swoop!

You will need: A jar of coconut oil & a bottle of apple cider vinegar.



First, rinse your hair with the vinegar, don’t wash it out, leave it in until it dries. The vinegar dissolves the ‘glue’ which sticks the eggs to your hair follicles. When the vinegar has dried, pour coconut oil into your hair, making sure you get complete coverage. Cover your hair with a shower cap or hair wrap & leave it in for the whole day, as it will take a few hours for the coconut oil to smother & kill the lice. Comb your hair to get as many of the eggs & lice out as possible and then shampoo as normal. You only have to do this once, it really works & no chemicals! Oh, & the coconut oil makes your hair beautiful & shiny, so your getting a lush hair treatment at the same time!

Coconut Candies

Coconut "Candies" Basic recipe (tweak it to suit your tastes):


1 cup unrefined coconut oil

1 teaspoon homemade vanilla extract

3 Tbsp raw honey

4 Tbsp organic unsweetened cocoa powder

... 4 Tbsp organic peanut butter

4 tbsp unsweetened dessicated coconut (optional)

Mix all ingredients together 'til mixture is smooth. Drop by spoon into 16 ice cube tray holes. Freeze. Store in a covered container in the freezer. Eat 1-3 a day.

New wash machine

A few months ago we bought an older washer to use outside because our ringer washer bit the dust.  It had a small leak which we knew about when we bought it but we were going to use it outside so the leak wasnt a big deal to us.  Well lately it has quit spinning the water out.  We have tried everything we know short of calling a repair man to fix it.  We just couldnt justify a repair man for a $45.00 washer.  So I told Jeff that I was going to go look at Craigslist for another used washer.  Right away I found one for $50.00 right in our town.  I called and we headed out in the pick up.  Long story short we have a new to us washer again.  Now I will list our old one for free to see if anyone wants it.
The girls and I should be able to install the new washer and move the old one out of the way.  If we cant get it Jeff can do it when he gets home.
The new washer looks like it is newer and has a few more bells and wistles on it.  Hopefully it will work better than the last one.  I am wondering if we need to keep a tarp on it when its not in use. What do you all think?  Is the electronic part sealed enough to keep it safe and dry when it rains?

NEW BABY JOINS OUR FAMILY

A 6 week old girl, Ortencia Ramadane, was placed in our care on Wed. Her mother died when she was 14 days old due post partem complications. Her village area is far from the nearest bush clinic. Ortenica was left with her grandfather, who is the only living relative. He cared well for her, but knew she needed a permanent home as he would not live to see her grow up. So our little family keeps growing, and we Praise the Lord that this little one will grow up knowing Jesus loves her.



CHURCH REPORT

1. April and May are Baptism months, so all 11 bush churches are preparing the new converts for this big event.

2. Two new churches are being organized in the remote regions of Namara and Nacala. Both villages have 20-30 new believers and plan to build mud brick churches later this year.

3. Members of BUTLER FUMC of Butler, PA have sponsored a water well. I was just notified that the well drilling rig we use will be in our area this week.

We hope to locate this well in Nacacca, population 5000+.

This village only has one water well which can serve only 1,200 people if it’s pumped around the clock.

THANK YOU BUTLER FUMC for this precious gift of life!



CONSTRUCTION MOVES ON

1. This week, the dorm’s kitchen foundation was completed and bricks will “fly” this week as we start on the walls.

2. A simple carport roof was built for the NEW NISSAN UD 70 (7 ton) truck that Eric will pick up in Maputo by mid-May.

Waiting on final import and registration to be completed. This truck is an awesome gift of love from friends in Dallas, TX.

A 2nd truck will allow expansion into a 3rd county where the gospel has never been preached and the orphans are numerous.



3. On Monday, our carpentry team leaves for the Mango Tree Church where they will rebuild the food warehouse which was destroyed by the December, 2011 tornado that hit this area. This warehouse is a key player in our bean buying which starts in mid-May.

Mary Mary quite contrary, how does your garden grow?

This year when we decided to plant a garden Mollie said we should do a better job of keeping the weeds out and making it look nice, so we have been going out as a family each weekend and spending less than an hour to keep it hoed and tilled.  Most weeks its just Hannah and Mollie but this week it was all of us girls.  It looks so nice freshly hoed and weeded.  So far we have lettuce radishes, romaine lettuce, potatoes, lots of tomatoes, green peppers, jalapeno peppers, red peppers, cucumbers, zucchini, yellow squash, beets, and some pretty morning glories around a pole.  Tomorrow Mollie said she would help me plant the okra and carrots and then we should be done planting until the fall garden.  Apparently I am more than a month behind on planting the garden, some folks around here are already harvesting zucchini.  Next year I will know better.

Get a tissue





They told me the big black Lab's name was Reggie, as I looked at him lying in his pen. The shelter was clean, no-kill, and the people really friendly. I'd only been in the area for six months, but everywhere I went in the small college town, people were welcoming and open. Everyone waves when you pass them on the street.

But something was still missing as I attempted to settle in to my new life here, and I thought a dog couldn't hurt. Give me someone to talk to. And I had just seen Reggie's advertisement on the local news. The shelter said they had received numerous calls right after, but they said the people who had come down to see him just didn't look like "Lab people," whatever that meant. They must've thought I did.

But at first, I thought the shelter had misjudged me in giving me Reggie and his things, which consisted of a dog pad, bag of toys almost all of which were brand new tennis balls, his dishes and a sealed letter from his previous owner.

See, Reggie and I didn't really hit it off when we got home. We struggled for two weeks (which is how long the shelter told me to give him to adjust to his new home). Maybe it was the fact that I was trying to adjust, too.
Maybe we were too much alike.

I saw the sealed envelope. I had completely forgotten about that. "Okay, Reggie," I said out loud, "let's see if your previous owner has any advice."

To Whomever Gets My Dog:

Well, I can't say that I'm happy you're reading this, a letter I told the shelter could only be opened by Reggie's new owner. I'm not even happy writing it. He knew something was different.

So let me tell you about my Lab in the hopes that it will help you bond with him and he with you.

First, he loves tennis balls. The more the merrier. Sometimes I think he's part squirrel, the way he hoards them. He usually always has two in his mouth, and he tries to get a third in there. Hasn't done it yet. Doesn't
matter where you throw them, he'll bound after them, so be careful. Don't do it by any roads.

Next, commands. Reggie knows the obvious ones ---"sit," "stay," "come," "heel."

He knows hand signals, too: He knows "ball" and "food" and "bone" and "treat" like nobody's business.

Feeding schedule: twice a day, regular store-bought stuff; the shelter has the brand.

He's up on his shots. Be forewarned: Reggie hates the vet. Good luck getting him in the car. I don't know how he knows when it's time to go to the vet, but he knows.

Finally, give him some time. It's only been Reggie and me for his whole life. He's gone everywhere with me, so please include him on your daily car rides if you can. He sits well in the backseat, and he doesn't bark or complain. He just loves to be around people, and me most especially.

And that's why I need to share one more bit of info with you...His name's not Reggie. He's a smart dog, he'll get used to it and will respond to it, of that I have no doubt. But I just couldn't bear to give them his real name. But if someone is reading this ... well it means that his new owner should know his real name. His real name is "Tank." Because, that is what I drive.

I told the shelter that they couldn't make "Reggie" available for adoption until they received word from my company commander. You see, my parents are gone, I have no siblings, no one I could've left Tank with .. and it was my only real request of the Army upon my deployment to Iraq, that they make one phone call to the shelter ... in the "event" ... to tell them that Tank could be put up for adoption. Luckily, my CO is a dog-guy, too, and he knew where my platoon was headed. He said he'd do it personally. And if you're reading this, then he made good on his word.

Tank has been my family for the last six years, almost as long as the Army has been my family. And now I hope and pray that you make him part of your family, too, and that he will adjust and come to love you the same way he
loved me.

If I have to give up Tank to keep those terrible people from coming to the US I am glad to have done so. He is my example of service and of love. I hope I honored him by my service to my country and comrades.

All right, that's enough. I deploy this evening and have to drop this letter off at the shelter. Maybe I'll peek in on him and see if he finally got that third tennis ball in his mouth.

Good luck with Tank. Give him a good home, and give him an extra kiss goodnight - every night - from me.

I folded the letter and slipped it back in the envelope. Sure, I had heard of Paul Mallory, everyone in town knew him, even new people like me. Local kid, killed in Iraq a few months ago and posthumously earning the Silver
Star when he gave his life to save three buddies. Flags had been at half-mast all summer.

I leaned forward in my chair and rested my elbows on my knees, staring at the dog.

"Hey, Tank," I said quietly.

The dog's head whipped up, his ears cocked and his eyes bright.

"C'mere boy."

He was instantly on his feet, his nails clicking on the hardwood floor. He sat in front of me, his head tilted, searching for the name he hadn't heard in months. "Tank," I whispered.

His tail swished.

I kept whispering his name, over and over, and each time, his ears lowered, his eyes softened, and his posture relaxed as a wave of contentment just seemed to flood him. I stroked his ears, rubbed his shoulders, buried my
face into his scruff and hugged him.

"It's me now, Tank, just you and me. Your old pal gave you to me." Tank reached up and licked my cheek.

"So whatdaya say we play some ball?" His ears perked again.

"Yeah? Ball? You like that? Ball?"

Tank tore from my hands and disappeared into the next room. And when he came back, he had three tennis balls in his mouth.

Cracks me up

My husband needs a portable table, chair and umbrella or some such get up so that when he is programming a control panel in the field he has a place to sit his computer, a place for him to sit and shade so he can see the computer. We have been researching options and he sent me this one today. I cant quit giggling. What do you think? Will this work here in south Texas outside in the summer? LOL

Some meal ideas for myself

I wanted to make myself a list of some meal ideas for this week using as much food from home as possible. This is the list I came up with. The meals can be either lunch or supper. Most likely they will be supper menus with the left overs used as lunch the next day or so.

1. leftovers~ Monday
2. breakfast casserole made with dehydrated hash browns, eggs and cheese (possible canned bacon if I want)
3. french toast topped with butter and powdered sugar
4. baked cheese sandwiches (place buttered bread and cheese as in a sandwich in baking dish. Pour egg milk mixture over until saturated. For each cup of milk mix in one egg. Ususally about a cup of milk for each sandwich or thereabouts. Bake at 350 until a knife inserted in middle comes out clean.)
5. cabbage rolls, mashed potatoes, vegetable
6. meatloaf, mashed potatoes, vegetable
7. frito chili pie
8. fried egg sandwiches
9. biscuits and gravy

missionary update

WITH GOD, ALL THINGS ARE POSSIBLE
I arrived in Balama at Noon on Monday, unpacked, and hit the dirt running on Tuesday.

On Tuesday, we praised the Lord as over 100 men and women came to worship with us, and were eager to work. We chose our construction teams from the best of the best and marked off
the kitchen.

The foundation was dug in 2 days and the first rock was prayed over and laid in place by Wed. morning.

By Friday, the foundation only lacked a few rocks of being finished. My men laid the rocks and poured the concrete mix faster than the tractor could fetch rock from the mountain, 5 miles away. The tractor had a full day’s start on them, so that tells you they were really moving.

I’m proud of my guys, as they are a fun team to work with, and pray they will keep up the great work.

STATE SOCIAL SERVICE DIRECTOR RECEIVES ADDED RESPONSIBILITY
During my time in the USA, the State Health Director passed away.

The government has temporarily placed our Social Service Director in that position, leaving Social Services to her Assistant Director (who is very helpful with our program).

We have been given the full “go ahead” to continue our program and will receive proper documents to this affect very soon. We are very happy that we can continue without delay to help the children.

GOLD RUSH CAUSES GOAT SHORTAGE

Carlitos Jorge, our Youth Pastor and expert goat buyer, went goat hunting and bought 5 young females.

If you remember, about 9 individual donors and the Sunday School children from FUMC in Butler, PA raised funds for 73 goats!
Carlitos found out that prices went up by $2/goat, and that we may have trouble finding 73 goats locally.

A gold rush is on in an area south of us (not a large find, but enough to cause many to fight over it). Since over 1000 have joined the rush, the demand for meat is greater than ever.

We plan to increase our heard to 30 goats at the moment, and then wait till our new barn is built before buying the remainder.

Goat hunting will continue on Monday.

PEQUARIA AND NAMUNO CHURCHES TO HOLD JOINT BAPTISM

I just returned from a fun time at Pequaria church, where over 80 people to hear the Word of God.

Saw many new faces, as these 2 villages have joined together for the
moment to serve the Lord.

A Baptism for 22 new converts is planned in the local river for the end of the month.

LEONA PHILLIPS has arrived in Balama and begins her missions orientation tomorrow.

Leona has a heart for serving and hopes to train into management to help me supervise the work here.

It will be a very busy week, so stay tuned for many more stories to come next week!

Homemade Cooking Spray

Avoid the nasty propellants in commercial cooking sprays by making a homemade version!

Ingredients
◦1 part olive oil (or your choice of oil) (I will use grapeseed oil most likely)
◦5 parts water
◦1 misting spray bottle

Instructions
1.Place oil and water into spray bottle.
2.Shake well before use.

Make a mosquito trap




Making a Mosquito Trap
Supplies:
•1 2 liter soda bottle
•a sharp knife
•black paper
•tape
•candy thermometer
Take a 2 liter soda bottle. Cut off the top right below where it starts to narrow for the top, invert and place inside the lower half.

Make a simple sugar syrup.

Ingredients:
•1 cup sugar
•1 cup water
•2 cups cool water
•1 tsp. active dry yeast
Directions:
Bring 1 cup of the water to a boil.

Dissolve the sugar into the boiling water.

Once the sugar is dissolved completely, remove the pan from the heat. Stir in 2 cups cool water, stir well.

Check the temperature of the syrup to make sure it is no hotter than 90 degrees F, if hotter, let cool to 90 degrees F, add 1 tsp. active dry yeast, no need to mix. Put syrup in the bottom part of the bottle, using the cut off neck piece, leave in place.

Be sure to seal the two parts of the bottle with the tape. The fermenting yeast will release carbon dioxide. Put black paper around the bottle since mosquitoes like dark places and carbon dioxide. This mosquito trap will then start working.

TIPS: Put the trap in a dark and humid place for 2 weeks, you'll see the effect. You'll have to replace the sugar water + yeast solution every 2 weeks.

Sonday remains consistent

... According to Dodge City’s Bryce Sonday, Friday was an off day.

“I didn’t have a very good day. I scratched my first three and I was lucky to pull one out though,” Sonday said.

The one he was “lucky” to pull through happened to travel 162-feet and seven-inches, which is personal best and the state’s best mark in the event.

Sonday has been fairly consistently staying around 160 feet this year after being stuck in the 140’s his first two years of high school.

The improvement can be attributed to his good health.

“Last year I broke my hip, so this year being able to lift weights and actually participate in full helped a lot,” Sonday said.


Also, Hannah is in her first year of track this year and she took second in discus at the district track meet with a throw of 76 feet. She is on Junior Varsity. I am so proud of her and of my cousins boy Bryce. He has broken disc and other track records since he started track. He is a junior at Dodge City High School in Dodge City Kansas.

Soap Saver

Some ladies in one of my sewing groups on face book were talking about making soap savers for outdoor faucets. Later in the shower I noticed that my soap was getting kind of small so I decided to make a soap saver for the shower.
I made the pattern up. Using sugar and cream yarn this is what I did.
G hook
Chain 11, half double crochet in each chain and then on around on back loop of the first 10 hdc's. In other words I just went up one side and down the other. Then I just continued for about 10 rows. Then I chained 3 and skipped a stitch and single crochet into the next stitch, chain 3 and skip a stitch, single crochet into next stitch and so on around. When I got to where I had started the chain 3 stitches I just chained about 25 after the last single crochet. I then cut my yarn and pulled it tight. Then I wove the yarn in and out through the loops I had just made and fastened the end of the chain 25 to the beginning of the last loop. This made the whole project one string with no cuts or starts. Lastly I wove the ends in and put my soap sliver in the bag and hung it in the shower.
I am sure I am the worst at giving instructions so if you can figure it out I will be impressed.

A local Planned Parenthood abortion business in California is copycatting the 40 Days for Life campaign, which recently resulted in saving the lives of more than 700 unborn children from abortion. The abortion business has set up its own 40 Days of Prayer for the local abortion center.

“We trust you to decide about your sexuality, having your children, and planning your family,” says a flier promoting the Humbolt County Clergy for Choice event. “We are religious leaders who value all human life. We accept that religions differ about when life begins. We are here to help.”

“We believe that human life is holy. That’s why we believe in your right to choose to be a parent or not,” the pro-abortion religious leaders continue. “It can be helpful to talk with friends you trust, with licensed counselors, and with whatever religious person you choose. How can they believe that human life is holy if they think its a womans right to destroy it? Everyone that is prochoice has already been born.

Tub and shower cleaner

12 oz. white vinegar
12 oz. liquid, blue dawn detergent

Heat vinegar in microwave or in a pan until hot, pour into squirt bottle.
add the Dawn soap. Put the lid on gently shake to incorporate. Heating the vinegar causes the ingredients to mix better.

You have a powerful cleaning product that will melt soap scum for tub and shower buildup. clean sinks, appliance just about anything. spray mixture on allow it to sit as long as overnight if needed. then scrub and rinse.. Be careful because a little bit goes a long way. You need a 24 oz squirt/spray bottle.

Also you can remove lite soap scum by sprinkling a few drops of water on a used fabric sheet and using the fabric softener sheet to scrub with.

Homemade Oxy type facial cleaning pads.

To make your own oxy type facial cleansing pads just buy the quilted cotton disk pads at the dollar store or big box store. They come in a tube sort of wrapping. Put several into a jelly jar with straight sides for easy access. In another container mix 10 to 12 drops of tea tree oil and 10 teaspoons of distilled water. Mix well and pour over the pads. You may need more to saturate the pads. Put the lid on the jar and turn it over to saturate all the pads. It may take a few minutes for all the pads to absorb all of the mixture.

After you make this once you will be able to figure out how much of the mixture to make for a jar full of pads.

missionary update

BUSH BUNNY HOPS OVER TO MOZAMBIQUE

After a smooth flight and 3 days of travel, I arrived in Pemba Saturday
with all my luggage. That is ALWAYS a major achievement when several
airports are involved.

We were honored to celebrate Jesus' resurrection this morning with 30
other Christians, all English Speaking who are here as missionaries or
employed by local companies. It was a beautiful time of worship followed
by a brunch, and as always, the Lord started networking us with several
other missionaries in this area.
Found me a real Veterinarian and made friends with other missionaries
who have a goat expertise. They have already downloaded onto our
computers their orphan training manual for goat management, which is a
BIG help to me.

Another friend is donating 5 table and chair sets, 17 wood doors, and 4
beds with USA mattresses to our orphans. We just have to go pick it up!

God is moving in a wonderful way, and it is a super blessing to be back in
Moz. Monday, we will "hit the bank", grab some baby formula, and be off
to Balama! I really look forward to getting many hugs from the staff and
kids tomorrow.

2012 will be a super busy year, so keep us in your prayers!

DIY non petroleum jelly

Ingredients :

1/8 cup grated beeswax (about 1 ounce)

1/2 cup olive oil

Method
Combine beeswax and oil in a small saucepan. Melt over very low heat or in the top of a double boiler. Pour into a jar to cool.

DIY recycled watering can/jug

I bought a watering can last year and it already fell apart because of the hot sun. This is an excellent idea for making your own from something you might otherwise throw away.
Notice the hole cut in the handle so the water will flow freely. ITs kind of hard to see but its a triangular shape.

Picnic table style container garden

You could make this taller to save on bending and use the bottom shelf to hold tools and watering cans. I will post an idea for a neat watering can in the next post.

We paid cash























Jeff and I saved for several months for a new to us car. We found this 2006 Ford Fusion with 84,000 miles on Craigslist. We had to drive about 2 1/2 hours to buy it but it was worth it. We are hoping this will last us for several years. It was well taken care of and looks and even smells new. Its so nice to have such a nice car to drive. Now we begin saving for our next new to us vehicle so that when the time comes we will the money to buy one.

Times sure have changed.

Maybe they should change back. Victory gardens, chickens, home canning and so on. Provide for yourself and your family instead of spending your time standing in line for a handout with your phone in the other hand. Try picking up a shovel or hoe and planting a garden, even a container garden can provide quite a bit. I long for those days.

I listened to God

Jeff and I asked God for direction on a question we had concerning our future. We specifically asked that if one certain thing did not happen that we would know for sure it was a door closing. Right away that door closed and I felt such peace knowing that God answered so clearly. Sometimes I try to force things to work out the way I want them to. This time I backed off the instant the door closed. I feel such peace. Thank you Lord Jesus for your caring and mercy and loving me.

BUSH BUNNY BRENDA HOPPING BACK TO AFRICA

It has been really fun visiting many of you during my travels, but the dry season is upon us and much work awaits us.
I’m flying out on April 3rd from Houston via Atlanta to South Africa.
I’ll lay over 2 days in South Africa in order to meet with Christian friends who assist us in many ways from that country.
I’ll also meet with Leona Phillips who will be joining me in Balama on April 13th.
I’ll be back in Moz. on April 7th. I will not have regular e-mail access during my travels.
Eric informs me that Moz. internet only works from 2a.m. to 4p.m. (due to overloading in the daytime) so be patient if you write me.

Your love gifts and pledges have been very generous, making it possible to continue helping the 1,700+ orphans and widows in our program.
We will also be able to open a new mission site to bring Jesus to remote areas of Namuno (Nah-moo-noo) county, where the gospel has never been preached.
Keep us in your prayers as this year’s activities will keep all of us hopping from dawn till dark.

Don Hitsman of Holland, MI, has committed to an extended stay through the middle of October to help us with the massive construction project.
If anyone else can come from August to November to help, it would be greatly appreciated.
November is our 2nd busiest month of the year with 5 food distributions/week as the rainy season breathes down our necks.

What's happening on the home front



Hannah told me last night that I need to update my blog about what is going on in our family. This blog is a way for my family to keep updated and in touch. With two of my daughters and the rest of my extended family far away, its a good way for them to keep up with us.



~~Hannah is in track for the first time this year. She is throwing shot put and the discus. So far she has not placed but I think she is doing well and will place by the end of track season.



~~Mollie bought her first car today. She saved and saved and paid cash. Now she will start saving for her next car.


~~Joy and Mollie are loving their job and the people they meet. They always come home with funny stories about their customers.


~~Jeff is doing well at his job. He likes the people he works with and the work he does.


~~I have been canning meals lately.

Canned mini hamburger steaks in onion gravy

Mini Hamburger-Steaks in Onion Gravy

Mini Hamburger-Steaks in Onion Gravy Ingredients for Onion Gravy
3 tablespoons olive oil
2 cups chopped onion
1 1/2 cups of finely chopped bell pepper
1 tablespoon sea salt
1 teaspoon black pepper
1 teaspoon garlic powder
2 – 32 oz. carton Beef broth
1 pkg Lipton Golden Onion Soup mix
½ pint ROUX, (Approximately)
1 can cream of onion soup
Heat the olive oil in a large size pan mix the chopped onions and stir well sauté them and add the chopped bell pepper and sauté together about ten minutes. Add the salt, black pepper and garlic powder and stir well.Add in the beef broth and stir well. Stir in approximately ½ pint of Roux tomake a gravy texture. Stir in cream of onion soupl. Heat for about twenty five minutes or until it is broughtto a boil. Set aside in covered pan to set until ready to can.

Ingredients for Mini Hamburger Steaks
5 lbs. fresh ground bee
f1 ½ cups of chopped onion
1 ½ cups bread crumbs
1 ½ tablespoon sea salt
1 tablespoon garlic powder
½ tablespoon black pepper
4 raw eggs

Mix all of these ingredients well. Roll this mixture out ona cutting board about ½ inch thick and then cut or roll out the miniHamburger-steaks, heat olive oil in a skillet and place the miniHamburger-steaks brown quickly and turn over and brown the other side. Set aside until ready to can. (10-11 pints or 6-7 quarts)

Canning:In heated pint jars: place 3 mini Hamburger-steaks in each jar, OR 6 mini Hamburger-steaks in each quart jar. Pour the onion gravy mix over the mini Hamburger-steaks leaving about one inch of space in the jar. Seal and put into canner. Ones the canner gets to10-11 pounds pressure can pints for 75 minutes, quarts for 90 minutes.I like to serve these over white rice.

There is 20 minutes more to wait until the chili I am canning today is done in the canner. Then it has to go back to zero and I will take the jars out and listen for the pop, pop, pop. I used new jars today so I am hoping I have a better seal rate. I did have a hard time today keeping the pressure at the right point on the gauge for some reason today though.


The reason I have been canning lately is to make meals that are easy for the girls and they wont end up spending so much money on fast food.
Here is a list of the things I am planning to can.
1. chili
2. ham and beans
3. mexican meatball soup
4. porcupine meatballs
I need suggestions for other meals to can. Does anyone have any ideas?

Neat use for old pallets

I like the idea of the wheels and two levels, as I am looking at this I am thinking that you could just keep adding levels of pallets until it is work bench height and with the rollers it would be easy to take to the work area or move around the garage or work area.

Today's agenda

Last week I canned beans twice. The first canner load had 4 jars that didn't seal so I put them in the fridge. The second load I put new lids on the unsealed jars and tried again. Again they did not seal. Today I am going to make a big pot of chili using the 4 jars of beans and then try to can the chili. I will also check the rims of the jars again to see if I missed a nick there. I will also use different jars just in case.

Then tomorrow I will can some ham and beans. Yesterday I bought a ham for just this purpose. Its nice to have my own version of fast food home jared and ready to eat.

Then the next two food items on the agenda to can are Mexican meatball soup and porcupine meatballs.

I also want to go to a pharmacy and buy some sulfur so I can make a batch of sulfur soap. Its good for parasites like lice and scabies. Other uses for sulfur are a salve to use topically. Just mix equal parts of preparation H type and Triple antibiotic ointment with enough sulfur to make a frosting thick paste. Use on saddle sores, cuts, scrapes, scabies, lice etc. may be used for both animals and humans.
