Spring Rolls (our version)

The girls made spring rolls yesterday. They were great. Here is the recipe
6-8 onions (sliced as thin as possible)
1 package rice noodles (soak in water, then snip with kitchen scissors)
3-5 carrots ( grated)
2 # ground turkey or sausage
2 egg yolks (save the white to seal the wrappers)
3-8 bulbs garlic (minced)
1/3 c. sugar
Mix in a large bowl with your hands, try to get it mixed well.
Place a spoonful into a spring roll wrapper. Use the egg white to seal it closed after you wrap it up. Fry in hot oil and drain on paper.
