I am getting the last batch of potatoes out of the canner now. All told we ended up with 69 quarts. I used maybe a half a dozen big potatoes to fill up the batch in the canner so with only the 100 pound bag we got probably 66 or 67 quarts.
I am quite please with the results. Its so nice to know I wont have to buy potatoes all winter and I love canned veggies especially home canned food. It is so much better than store bought.
I also sliced several onions from the 50 pound bag I bought at the same time as the potatoes and put them in the dehydrator. I just want to be sure nothing is wasted.
