Leftover roast beef lunch

When we cooked at camp we were in charge of the noon and evening meal. For lunch we had roast, mashed potatoes, gravy, green beans and rolls, along with salads and desserts.
For supper we used the left over roast beef and made home made rolls and had french dip sandwiches, baked beans and cole slaw. Our meals were a big hit.

We ended up with a bit of roast beef and gravy or beef broth when we were done so Joella and I divided it. Today I am warming it up and will make a chunky beef gravy over mashed potatoes and green beans.

I think this is something that Christina and the kids will enjoy and it is a way to use up the leftover roast.

Tomorrow we will be packing Christina and the kids up and heading off to Oklahoma city to meet up with brother Bill and Jeff. Then Bill and Chirstina will be heading to Kingman for a mission trip. They are hoping to finish what we all started last spring.
