Today I canned 14 pints of a rotel type of concoction I made. I used cherry tomatoes. I figured if the skins bother me when I go to use them I can blend it all up with my immersion blender.
I was asked for the recipe and of course I don't have one but this is what I did. I put some cored, halved cherry tomatoes in the jar then I added about 1/4 cup of chopped onion and a sliced jalapeno and then filled the jar with more tomatoes. I then put 1 teaspoon of salt on top and covered with boiling water. Ran a knife around the edges to get the air out, placed the lids and processed in my steam caner for 10-15 min. I tend to go a little over the time just to make sure.
