Menu Ideas
These meals can be made at lunch time and enjoyed at that time and then again at supper

Vegetable stir fry over rice
Spaghetti and meatballs in sauce

Salmon patties and fried potatoes
Pancakes and sausage
Biscuits and gravy (homemade biscuits)
Goulash and a vegetable
Mashed potatoes with hamburger gravy and a vegetable

Wednesday Menu
Breakfast: soaked oatmeal with honey and butter or brown sugar and butter
Lunch: Lentil Soup

1 small or ½ large onion, chopped
2 T olive oil
3 cups of lentils
1 T. salt
12 cups water
1 can Rotel Tomatoes
Sauté chopped onion in olive oil. When onion is soft add lentils, salt and water. Cook for 45 minutes to 1 hour or until lentils are soft. Add Rotel Tomatoes. This dish is spicy and tastes good when served with a dollop of sour cream in each serving.
Supper: Salmon patties Made with 1 can of salmon, 2 eggs and crackers, fried in Olive oil

Menu 9-28 thru 10-4
I decided this week to just list menu ideas. Last week I kept changing what I was having when, so this week I can just pick from the list.
Menus:
Biscuits & gravy
Chicken & noodles
X Sloppy Joe's extended with black beans
fried rice
Broccoli & cheese soup
Ham, beans & cornbread
salmon patties
creamed dried beef on toast
creamed hard boiled eggs on toast
mystery meatballs with sauce (recipe at page bottom)
X bean and cheese burritos
omelets
Sides:
fried cabbage & onions with carrots
Vegetables
mashed potatoes
slaw
potato pancakes
Mystery burgers or meatballs
2 egg whites
1 c. cottage cheese
1 c. oatmeal
1 pkg. onion soup mix
Mix ingredients together and form burgers or meatballs. Fry in a small amount of oil.
Be sure to save the yolks for custard or other egg dishes.

This week's menu

I decided to try to do the Hillbilly Housewife's $70.00 everyday menu. If you go to her site and find the $70.00 everyday menu you can see what I will be trying to follow.
I will be substituting for things I don't have on hand. This way I can still do my pantry challenge.
I like this menu because she has the week's menu made up, the shopping list made out and then tells you what to do daily. It's a no brainer.

Menu
I have a menu worked up for a couple of days. We will leave Thursday to pick up the girls at church camp and take them back again on Sunday so the week is short.
Breakfast will be oatmeal or eggs
Lunch will be fresh vegetable juice and a sandwich
Evening meals will be:
Monday-Steak and sweet potato
Tuesday-jalapeno poppers (made with fresh homemade cream cheese)
Wednesday-toasted baguette slices with cream cheese (fresh homemade), pesto, tomato spread
Edited to add: We just found out we are staying until a week from Friday so the menu will have to be extended. I had to take a roast out of the freezer to make some room so it is in the crock pot right now.

PLANNING MEALS
I have not been menu planning and I realize I do like having a plan. I had earlier found a monthly meal planner from K State in Kansas. Here is the site: http://www.humec.k-state.edu/fnp/resources/materials/menus/Month_of_Menus.pdf This is a pdf document of about 73 pages. It lists resources such as equivalents, substitutions and such. I did not need that part but it is a great resource for a less experienced cook.
I read each page and found very few meals we would not enjoy. The grocery list is made for you. You can just cross off any items you may already have on hand.
I think when we come back from our mission trip I will give this month long plan a try.
I needed to go to Liberal today to pick up Hannah so I did my Walgreens shopping.
I did very well.
10 Garniea Fructis @ 2.99 ea.
12 Orbit gum @ .99 ea.
3 Glade air sense and spray @ 7.99 ea.
2 Colgate toothpaste @ 2.99 ea.
2 pkg. sweet tarts @ .80 each
