2 c. pineapple (shredded)
1 c. pineapple juice
1~ 3oz pkg. lemon jello
1 c.boiling water
2 c. cooked rice (cooled)
1 c. whipping cream
1/2 c. sugar
Marciano cherries for garnish
Drain pineapple, measure out 1c. of juice.
Dissolve jello in boiling water.
Add pineapple juice to jello.
Let jello set in refrigerator.
When jello is set whip with beater until smooth.
Add pineapple juice to jello.
Whip the cream, adding sugar and whipping that in as well.
Add the pineapple to the rice.
Fold the jello into the pineapple/rice.
Fold the whipped cream in.
Garnish with Marciano cherries.
