Cry Baby Cookies











This is Jeff's favorite cookie. The recipe is his mom's Donna's. I don't make these very often but when I do Jeff goes nuts for them. We are making them as a surprise for when he comes home this weekend. I wont post this until he is on his way. This time Hannah suggested we make these for Jeff for when he gets home. Mollie made the cookies, I'm not sure why she used the dough hook but oh well, and I made the 7 min. frosting.
1 c. sugar
1 c. shortening
2 eggs
1 c. molasses
2 tsp. cinnamon
2 tsp. ginger
2 tsp. soda in 1 c. hot coffee
1/4 to 1/2 tsp. salt
5 c. flour
Mix all together. Drop by spoonfuls onto cookie sheet and bake at 350 degrees until done.

When cool frost with 7 minute frosting.
Frosting recipe

2 egg whites, unbeaten
1 1/2 c. sugar
5 tbsp cold water
1 1/2 tsp. light corn syrup
1 tsp. vanilla

Put egg whites, sugar, water, and corn syrup in upper part of double boiler. Place the correct amount of water in bottom of double boiler and turn heat to high. Beat the mixture until thoroughly mixed. When the water is boiling place the top portion with your mixture in it on top and continue to beat with mixer and cook for 7 minutes. Remove from heat, add vanilla and continue beating with mixer until thick enough to spread on cookies. Frost cookies. Let set to harden. Place in a container with a lid and keep in the refrigerator. These get better and better, so I am told. They have never lasted long enough around here for us to find out.
