Winter canning

I picked up some pork roast yesterday to can. It was on sale for 99 cents a pound. That's about as good as I can get it. Today I am picking up some chuck for 1.40 a pound. IT needs to age for two weeks in the fridge. While it is aging I will can the pork. I will be making sweet pork for tacos, that's about the only way I like pork roast. After I get the beef canned that will give us chicken, pork and beef canned. I am looking froward to some easy, stress free winter fare.
