Homemade Flour Tortillas

Homemade Flour Tortillas
 
 
Serves: 12 6-inch tortillas
Ingredients
  • 2 cups all purpose flour
  • ¾ tsp salt
  • ½ tsp baking powder
  • 3 Tbls shortening
  • ¾ cup water
Instructions
  1. Mix flour, salt, and baking powder together with a fork.
  2. Add shortening and continue mixing with fork until mixture resembles coarse crumbs.
  3. Make a well in the center of the mixture and add the water.
  4. Slowly incorporate the dry and wet ingredients until dough starts to form.
  5. Place dough on a floured surface and knead for several minutes until dough is nice and smooth.
  6. Cover and let rest for 30 minutes.
  7. Divide dough into quarters and then each quarter into thirds for a total of 12 portions.
  8. Roll out each portion into a 6-7 inch circle.
  9. Cook the tortillas in a skillet over medium-high heat for about two minutes on each side or until puffed and lightly browned.
  10. Remove to a plate and cover with a towel to keep warm.
  11. Serve immediately.

7 Up Biscuits

7 Up Biscuits:


4 cups Bisquick

1 cup sour cream

...1 cup 7-up

1/2 cup melted butter

Mix bisquick, sour cream and 7 up. Melt butter in pan, and put shaped biscuits in, then Bake at 425 until golden

3 Ingredient Banana Bread

Shortcut Banana Bread

(1) yellow cake mix

2 eggs

3-4 overripe bananas

(Optional) 1 cup chocolate chips, nuts, etc.
Add all ingredients to a large bowl (or stand mixer) and mix well. Fill two small, greased loaf pans, or one large loaf pan.

Bake at 350° for 35-40 minutes (bake longer if using larger loaf pan)

All purpose biscuit mix

INGREDIENTS:


6 cups all-purpose flour

3 tablespoons baking powder

1 tablespoon salt

1 1/4 cup butter flavored shortening
DIRECTIONS:

Mix together the flour, baking powder, and salt in a large bowl. Cut in shortening with pastry blender until mixture resembles coarse corn meal. Store in a container with tight-fitting lid.



For a healthier mix, make with 3 cups white flour and 3 cups whole wheat flour.



For Buttermilk Mix, add 9 tablespoons dry buttermilk powder to the basic mix.


NUTRITION:

167 calories, 9 grams fat, 19 grams carbohydrates, 3 grams protein per 1/4 cup mix.

Jiffy corn muffin mix clone

INGREDIENTS:


2/3 cup all-purpose flour

1/2 cup yellow corn meal

3 tablespoons granulated sugar

1 tablespoon baking powder

1/4 teaspoon salt

2 tablespoons vegetable oil

DIRECTIONS:

Combine flour, corn meal, sugar, baking powder and salt. Mix well with whisk. Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone.

To make corn muffins: Preheat oven to 400 degrees F. Combine above mixture with 1 egg and 1/3 cup milk. Fill muffin tins 1/2 full. Bake 15-20 minutes Makes 6 muffins.


COOK'S NOTES:

Sometimes a recipe will call for a box of Jiffy Corn Muffin Mix. Here's a clone recipe you can make at home.

Fluffy biscuits

Basic Double-Recipe of Biscuits
Makes about 18 (2-1/2 inch) biscuits

This biscuit recipe comes together quickly. Though not as flaky as cutting the butter into the flour mixture by hand, the biscuits are still quite tender and fluffy.

Ingredients:
3-1/2 cups all-purpose flour, plus extra for rolling
1 teaspoon salt
2 tablespoons baking powder
10 tablespoons unsalted butter, chilled, cut into 10 pieces, plus extra for brushing
1-1/2 cups milk

Directions:
1. Preheat oven to 450 degrees F. In a food processor, whir together the flour, salt and baking powder. Sprinkle the chunks of butter over the top, then pulse the mixture until it resembles a coarse meal. Pour this into a bowl.

2. Make a well in the center of the flour mixture and pour in the milk. Bring the dough together using a fork. Turn the dough out onto a floured surface. Try to bring the mixture together quickly and without overworking it. Roll the dough until it is about 1/4-inch to 1/3-inch thick. Use a biscuit cutter or top of a glass to cut biscuit dough into rounds.

3. Place the rounds close together on an ungreased baking sheet. They should be close, but not touching. Bake 12 to 14 minutes. As soon as the biscuits are out of the oven, brush the tops with melted butter. Serve warm.



Sweetened Biscuits
Makes about 18 (2-1/2 inch) biscuits

These biscuits are great for mornings with jam or desserts.

Ingredients:
3-1/2 cups all-purpose flour, plus extra for rolling
2 teaspoons salt
2 tablespoons sugar
2 tablespoons baking powder
10 tablespoons unsalted butter, chilled, cut into 10 pieces, plus extra for brushing
1-1/2 cups milk

Dumplings

Dumpling Recipe
Use this easy dumpling recipe for perfect dumplings every time, making the crucial substitution to achieve the best results.

•2 cups of white flour
•4 tsp. baking powder
•1 tsp. salt
•4 tbsp. soft margarine or butter
•1 cup of milk (or more)
Method:

1.Combine flour, baking powder, and salt in a bowl.
2.Cut in butter that's been kept at room temperature or use soft margarine.
3.Stir milk lightly into the flour mixture with a wooden spoon and adjust amounts to make sure that you have a moist dumpling dough.

Dumpling Cooking Tips

•Make sure your soup or stew is on a gentle simmer. The liquid does not have to be boiling to achieve tender dumplings. Remember that pot temperature rises with the lid on and you don't want the contents to stick to the bottom and burn.

•Drop dumpling dough into the liquid by teaspoonfuls or for larger dumplings use a tablespoon. There's no need to worry about shaping perfect dumplings because they will puff up as they cook. Cover your pot with a lid so that the dumplings can steam.

•Check your dumplings after 10 minutes. Use a knife to cut a slit to check inside. Cook until dumplings are no longer raw in the middle.

•Do not overcook dumplings. Dumplings may disintegrate if left to cook too long.

Sweet Cronbread recipe



1 c. cornmeal
3 c. all-purpose flour
1 1/3 c. sugar
2 Tbs. baking powder
1 tsp. salt
2/3 c. vegetable oil
1/3 c. melted butter
2 Tbs. honey
4 eggs, beaten
2 1/2 c. whole milk

Preheat oven to 350 degrees and grease a 9×13 inch baking dish or a medium cast iron skillet. In a large mixing bowl, stir the cornmeal, flour, sugar, baking powder, and salt. Pour in the vegetable oil, melted butter, honey, beaten eggs, and milk, and stir just until moistened. Pour the batter into the greased baking dish and bake in 350 degree oven for 45 minutes. The cornbread will turn lightly brown and have slight cracks.

My kinda sorta bread recipe

Several people on face book have asked me to share my bread recipe and since I don't measure anything but the water its kind of hard to share, but here is a guesstimate of what I do.

I can only sorta tell you. I put 2 cups of warm water in the bowl of my kitchen aid. Add some yeast and sugar, maybe 2 T. of each? This time I also added about 1/4 c. instant potatoes Let sit until its bubbling or working. Then add a glug o...f olive oil maybe 1/3 c. or 1/4 c. then add about 1/3 c. powdered milk, flour and some salt, I just mix it and add flour as needed. When it cleans the side of the bowl I let it mix for a bit then take it out and oil the bowl, turn the dough around the bowl to get oil all over it and cover the bow. I let this sit until doubled in bulk, 45 min to an hour. Then I punch it down and form into what ever I am making that day.

How is that for a precise and clear as mud recipe?

Banana Bread Recipe

3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
Method
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Yield: Makes one loaf.

Pumpkin Dinner Rolls




Description:
A soft yellow dinner roll... so tender and delicious! These are our traditional every-year Thanksgiving dinner rolls!

Yield:
4 Dozen Rolls

Ingredients:
1 cup sugar
1/2 cup warm water
2 cups warm milk
¼ cup butter, softened or melted (I warm it with the milk above)
2 cups mashed cooked pumpkin
2 teaspoons salt
1/2 cup wheat germ or whole wheat flour
10-12 cups all-purpose flour or bread flour
7 teaspoons dry yeast

Instructions:
1. In large mixing bowl, combine sugar, water, milk, butter, pumpkin, and salt. Mix well.

2. Add wheat germ, 7-8 cups of the flour, and yeast. Mix, and then continue adding flour and kneading until dough is elastic and not sticky.

3. Place dough in greased bowl; grease top of dough, cover with a towel, and set in a warm place until doubled (about 60-90 minutes).

4. Punch dough down and divide into thirds. Divide each third into 16 pieces and shape into balls.

5. Place on greased baking sheets, and grease tops. (I use two 11x15-inch baking sheets, and put 24 rolls on each.) Cover and let rise until almost doubled, about 30 minutes.

6. Bake at 350 degrees for 15-20 minutes, until tops are golden. Remove to wire racks and cover with a towel. Brush tops with butter if desired, as soon as rolls are removed to the wire racks. Serve warm with butter.





Additional Notes:
Re-warm leftover rolls by wrapping securely in foil and placing in a 325 degree oven for 15 minutes. Just as good as fresh! :)

Plain Cake Doughnuts

"A simple cake doughnut lightly spiced with cinnamon and nutmeg. Coat with sugar and cinnamon, or a confectioners' sugar glaze."
Ingredients:
2 cups all-purpose flour
1/2 cup white sugar
1 teaspoon salt
1 tablespoon baking powder
1/4 teaspoon ground cinnamon 1 dash ground nutmeg
2 tablespoons melted butter
1/2 cup milk
1 egg, beaten
1 quart oil for frying

Directions:
1. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
2. In a large bowl, sift together flour, sugar, salt, baking powder, cinnamon and nutmeg. Mix in butter until crumbly. Stir in milk and egg until smooth. Knead lightly, then turn out onto a lightly floured surface. Roll or pat to 1/4 inch thickness. Cut with a doughnut cutter, or use two round biscuit cutters of different sizes.
3. Carefully drop doughnuts into hot oil, a few at a time. Do not overcrowd pan or oil may overflow. Fry, turning once, for 3 minutes or until golden. Drain on paper towels.

Lemon Zucchini Bread




"Lemon zest adds a touch of summer to this sweet zucchini bread!"
Ingredients:
1 1/2 cups shredded zucchini
3/4 cup white sugar
1 egg
1/2 cup vegetable oil
1 1/2 cups all-purpose flour 1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon ground cinnamon
2 teaspoons lemon zest

Directions:
1. Preheat oven to 325 degrees F (165 degrees C). Grease an 8x4 inch loaf pan.
2. In a bowl, beat together the zucchini, sugar, egg, and oil. In a separate bowl, sift together the flour, salt, baking soda, and baking powder; stir in the cinnamon and lemon zest. Stir the flour mixture into the zucchini mixture just until blended. Pour the batter into the prepared pan.
3. Bake 45 minutes in the preheated oven, until a knife inserted in the center comes out clean. Remove from heat, and cool about 10 minutes before turning out onto a wire rack to cool completely.

Hawaiian bread for the bread machine

INGREDIENTS:
3 cups all purpose flour
1 teaspoon salt
1 package yeast
1/2 cup pineapple juice
3/4 cup water
2 tablespoons butter I used 2 T. coconut oil
1 egg
1/2 cup mashed potato flakes
PREPARATION:
Place ingredients in bread machine in the order recommended by the manufacturer. Select basic dough light.

My bread machine was one I bought at Goodwill and I never had a book with it so I don't know what order the manufacturer recommends. I just put them in in the order given and so far it looks like a nice bread. I found it interesting that the pineapple juice was used in place of sugar.

Edited to add: This is the best bread I have ever made in my bread machine. I love it. This recipe is a keeper for sure.

Banana Pineapple Bread

A soft, moist homemade quick bread with banana and pineapple
Yield:
2 loaves
Ingredients:
3 cups flour

1 teaspoon baking soda

1 teaspoon cinnamon

3/4 teaspoon salt

3 eggs

2 cups sugar

1 cup oil

2 teaspoons vanilla extract

2 cups mashed bananas (about 4 medium bananas)

1 cup crushed pineapple (with the excess liquid drained; this is almost the amount in a 15-ounce can of pineapple)
Instructions:
1. In large mixing bowl, combine flour, baking soda, cinnamon, and salt.
2. In another mixing bowl, beat together the eggs and sugar. Add remaining ingredients, beating until well mixed.
3. Pour wet ingredients into bowl of dry ingredients and stir until moistened. Don't over-beat.
4. Pour batter into two greased and floured loaf pans (use smaller loaf pans -- 6x3-inch, or use several mini loaf pans). Bake at 350 degrees for 60 minutes or until loaves test done.

This is a wonderful banana bread recipe. The pineapple and banana flavors go perfectly together, and it makes a moist, spicy loaf. We like to freeze the loaf and then later, thaw and slice. It still tastes delicious! This is an easy recipe and is complimented by guests. My rating: 10/10

Bread machine country white bread

Recipe for bread machine.


Country White Bread

1 cup warm milk (110°F - 115°F / 45°C)
1 1/2 tablespoons butter or margarine
1 large egg
1 1/2 teaspoons salt
4 cups bread flour
1 1/2 tablespoons granulated sugar
2 teaspoons active dry yeast
Place ingredients in the bread machine pan in the order suggested by the manufacturer. (Usually wet ingredients first, then dry and lastly the yeast.)
Select the Basic bread cycle and start machine.
Makes one (1 1/2 or 2 pound) loaf.

Cook's Note: Because of the milk and raw egg, do not use the time delay for this recipe.

Since my oven is microscopic I will be using my bread machine to make bread more often. Today I am gathering recipes and filing them here for my future reference.
