Slow cooker swiss steak

Cut one round steak into serving sized portions.  Place in crock pot.  Cover with a can or two of stewed tomatoes and one chopped onion.  Cover and cook on high 3-4 hours or low for about 8 hours.   My family likes this with mashed potatoes and a vegetable like corn, peas or green beans.  This is a super easy meal because you don't even have to brown the meat before you put it in the crockpot. 

I ended up not getting this started in time so I transferred it to my pressure cooker and it was done in about 20 minutes.  I am going to start using my pressure cooker more often because it makes the food tender and it uses less fuel.  Both of which are good things.

Debbie Haston's seasoned taco meat to can

I Season my own tacos and don't use a package seasoning.

Here is my recipe. This is for 6 lbs of hamburger. I start with 3 yellow onions md. to lg. diced and 3 Tablespoons Cumin, 3 Tablespoons minced garlic,

 8 Tablespoons chili powder, 6 teaspoons of cayenne pepper. I put that in a very large skillet and bloom the spices (let them get hot) then add the hamburger and fry all together until done.

 Drain well saving the juice off of the meat. Fill jar to the bottom mark on jar with the meat juice then pack with cooked meat. I added a half teaspoon of better then bullion to each jar. so did not add salt.

 Since the meat is already cooked we only pressured for 60 min at 10Lbs. I use this meat in Tacos, burritos, and for a chilli base.

Homemade Pepperoni

In this recipe for homemade pepperoni you will have the option of making the pepperoni in one of two ways.


The first option is the traditional way to make homemade pepperoni. To make your homemade pepperoni in this fashion, follow the recipe below (except for the liquid smoke) and then stuff into hog casings. After you stuff the homemade pepperoni you will need to smoke and dry the pepperoni in your smoker.

The next way to make thishomemade pepperoni is the quick and easy recipe. In this method all you need to do is follow the recipe below, and then let the mixture rest in your fridge for 48-72 hours. After that you can form the homemade pepperoni into logs and bake in the oven at 200* for 8 hours.

Homemade Pepperoni Recipe

5 lb Fresh Ground Beef
3 tsp Liquid Smoke (Leave out if you’re going to smoke your pepperoni)
5 tsp Ground Black Pepper
5 tsp Mustard Seed
4 tsp Crushed Fennel
3 tsp Crushed Red Pepper
3 tsp Garlic Powder
2 tsp Paprika
2 tsp Sugar
5 tsp Morton’s Tender Quick

Combine all of the dry ingredients in a small bowl. Grind 5 pounds of fresh beef from chuck or round, or use 5 pounds of fresh ground beef from the store. Mix togetherthe beef and the dry ingredients and place the homemade pepperoni mixture in the fridge for 48-72 hours. After it has been in the fridge follow one of the methods above for making your homemade pepperoni.

Sweet and Sour chicken to can

Sweet And Sour Chicken

4.5 lbs chicken,boneless, skinless, thighs and/or breasts cut in bite sized pieces
2 large green peppers chopped
1 large red pepper chopped
1/2 of an onion chopped
3 20 oz cans pineapple chunks drained, reserve juice
3/4 cup brown sugar
1 1/4 cups white vinegar
6 tablespoons coconut aminos (I have to find out what these are)
1/4 cup ketchup
1 tsp ginger

Layer the chicken, onions, peppers and pineapple in quart jars.

Heat the brown sugar, vinegar, soy sauce, catsup, ginger, and 3 cups of pineapple juice (add water if there is not enough) and bring to a light boil until the sugar is dissolved.

Pour liquid over the solids in the jar with 1" headspace. REMOVE BUBBLES!

Pressure can for 90 minutes at 11 lbs pressure or according to your elevation.

Mini Hamburger-Steaks in Onion Gravy Ingredients for Onion Gravy
3 tablespoons olive oil
2 cups chopped onion
1 1/2 cups of finely chopped bell pepper
1 tablespoon sea salt
1 teaspoon black pepper
1 teaspoon garlic powder
2 – 32 oz. carton Beef broth
1 pkg Lipton Golden Onion Soup mix
½ pint ROUX, (Approximately)
1 can cream of onion soup
Heat the olive oil in a large size pan mix the chopped onions and stir well sauté them and add the chopped bell pepper and sauté together about ten minutes. Add the salt, black pepper and garlic powder and stir well.Add in the beef broth and stir well. Stir in approximately ½ pint of Roux tomake a gravy texture. Stir in cream of onion soupl. Heat for about twenty five minutes or until it is broughtto a boil. Set aside in covered pan to set until ready to can.

Ingredients for Mini Hamburger Steaks
5 lbs. fresh ground bee
f1 ½ cups of chopped onion
1 ½ cups bread crumbs
1 ½ tablespoon sea salt
1 tablespoon garlic powder
½ tablespoon black pepper
4 raw eggs

Mix all of these ingredients well. Roll this mixture out ona cutting board about ½ inch thick and then cut or roll out the miniHamburger-steaks, heat olive oil in a skillet and place the miniHamburger-steaks brown quickly and turn over and brown the other side. Set aside until ready to can. (10-11 pints or 6-7 quarts)

Canning:In heated pint jars: place 3 mini Hamburger-steaks in each jar, OR 6 mini Hamburger-steaks in each quart jar. Pour the onion gravy mix over the mini Hamburger-steaks leaving about one inch of space in the jar. Seal and put into canner. Ones the canner gets to10-11 pounds pressure can pints for 75 minutes, quarts for 90 minutes.I like to serve these over white rice.

Tuna Cakes


I've taken my traditional tuna cakes recipe and revamped it replacing salted top saltines, whole egg and baking rather than frying. The result is just as delicious but far healthier.

Hands-On Time: 5 minutesReady In: 21 minutes
Yield: 4 servings Ingredients
2 cans (6 1/2 ounces each) tuna in water - undrained
1 sleeve no salt tops saltines - crushed
2 egg whites
1 Tablespoon soy sauce
1/4 teaspoon garlic powder
2 tablespoons each finely diced red, yellow and green pepper
Directions
Heat oven to 350 degrees F and lightly grease a baking sheet.
Place crushed saltines in a bowl and add tuna with water, egg whites, soy sauce and garlic powder. Mix until well blended.

Add peppers and stir until well distributed.
Form mixture into 8 evenly sized patties and place on greased baking sheet.
Bake for 8 minutes and turn over. Bake for another 8 minutes.

Vegetable and Turkey Meatloaf Recipe

Edited to add: I made this meatloaf and while it was not horrible and we ate it, it was not one I will probably make again unless I use 50/50 ground beef and turkey. To me the texture was more like tofu.






A deliciously low calorie meatloaf that will makes a great weeknight dinner idea, this Vegetable and Turkey Meatloaf Recipe is not only tasty, but quite healthy too. Made with ground turkey instead of beef, and loaded with veggies, this traditional American meal gets a healthy makeover.
Ingredients
• 1 1/4 lb ground turkey
• 1 medium yellow onion, diced
• 1 large zucchini, shredded
• 1 large celery stalk, finely chopped
• 3 medium carrots, shredded
• 1 red bell pepper, finely chopped
• 1/2 lb mushrooms, chopped
• 4 garlic cloves, minced
• 3/4 cup old fashioned rolled oats
• 1/2 cup unsweetened applesauce
• 2 tbsp tomato paste
• 1/4 cup fresh parsley, finely chopped
• 1/4 cup liquid egg substitute
• 1/2 tsp paprika
• 1 tsp salt
• 1 tsp black pepper
Instructions
1. Preheat the oven to 350 degrees. Line a loaf sized baking pan with foil.
2. Spray a nonstick skillet with non fat cooking spray. Saute the onion until softened – about 3-5 minutes. Add in the carrots, celery, and bell pepper, and cook for another 3-5 minutes to soften the veggies. Add in the zucchini, mushrooms and garlic and saute about 3 more minutes.
3. In a large bowl, combine the ground turkey, oats, parsley, egg substitute, applesauce, tomato paste, paprika, salt and pepper. Fold in the veggies.
4. Empty the mixture into your baking pan, and shape mixture into a loaf form with your hands.
5. Bake until browned and meat inside is thoroughly cooked – about 1 hour.
6. Remove from oven and let stand about 10-15 minutes. Cut into 6 equally sized slices.
Preparation time: 20 minute(s)
Cooking time: 1 hour(s) 15 minute(s)
Diet (other): Low calorie, Reduced fat, Reduced carbohydrate, High protein
Number of servings (yield): 6










This is what I am making for supper tonight along with baked sweet potatoes which I will serve with kefir cream cheese. I am baking this in the crock pot. If it starts heating up the house I will put it outside on a table by the door.

  • 1 pkg. ranch salad dressing mix

  • 1 pkg. Italian salad dressing mix

  • 1 pkg. brown gravy mix

  • 1-1/2 cups water

  • Mix all the dry ingredients with the 1-1/2 cups water. Place roast in crock-pot. Pour the mixture over roast and cook on low overnight. Once you do this recipe - you will never prepare any other way. The gravy it makes - is to die for.

  • This is definitely a male favorite and will fast become a family favorite.

  • Edited to add: We had this last night and it smelled very good while it was cooking and tasted great too. I couldnt find Italian dressing mix so I used a bottle of Italian dressing which made it kind of sweet. Next time I will look up how to mix up my own Italian dressing seasoning. This was very good, the whole family loved it and we will be making it again.

Homemade veggie burgers



Ingredients:
1 (15 oz.) can kidney or pinto beans, drained, and rinsed
1-2 C. rolled oats (as needed)
1/2 C. all-purpose flour
1 egg, beaten
1/2 C. mushrooms, finely chopped
1/2 C. onions or leeks, finely chopped
1-2 carrot(s), shredded
1/2 C. red bell pepper, chopped
3 clove garlic, pressed or minced
1 tbsp. soy sauce (or Worcestershire sauce)
1/2 tsp. salt
Spices and herbs to taste (Cajun, Italian, Mexican, etc.)


Instructions: Throw all ingredients (start with only one cup of oatmeal) in food processor (or use a stick blender).

Pulse until coarsely chopped. Add more oatmeal as needed, until patties hold together well.

Chill mixture for about an hour, then shape into smallish patties (these are rich and filling, so don't make them too big!).

Chill patties several hours, or freeze and save until needed.

If your patties want to fall apart, you'll want to cook them in the oven. Broil patties 4-6 inches from heat about 10-15 minutes, until browned and heated throughout.

If your patties hold together well, you can simply saute them in a skillet. Heat a bit of olive oil and cook patties over med-high heat 6-7 minutes a side, until crisp outside and cooked through.

For veggie burgers on the grill, pre-cook burgers, then re-heat on the grill.

Eat on pitas, whole wheat buns, or on a bed of lettuce. Dress as desired.
