Tuna Casserole
I made a pan of tuna casserole about 8x10 or so. Here is what I did.
First I boiled some egg noodles.

While that was cooking I made a roux.
4 T. olive oil
4 T. flour
3-4 c. milk
make like you are making gravy.
Add salt, pepper and celery salt. I also added about 1/2 c. shredded cheese.
Edited to add: I just read a recipe about making this and she used onion, garlic salt and celery ribs chopped fine.

I didn't have any frozen peas so I opened two cans and drained one and added about 2/3 of one can to the roux.

Then I opened and drained two cans of tuna and added that to the roux.

Its baking now at 350 degrees. I will bake it until the cheese melts and its bubbly.

Pass far stricter environmental protection and animal rights laws.
Allow workers to elect their supervisors.
Lower the retirement age to 55. Increase Social Security benefits.
Create a 5% annual wealth tax for the very rich.
Ban the private ownership of land.
Make homeschooling illegal. Religious fanatics use it to feed their children propaganda.
Reduce the age of majority to 16.
Abolish the death penalty and life in prison. We call for the immediate release of all death row inmates from death row and transferred to regular prisons.
Release all political prisoners immediately.
Immediate withdrawal from Iraq and Afghanistan.
Abolish the debt limit.
Ban private gun ownership.
Strengthen the separation of church and state.
Immediate debt forgiveness for all.
End the 'War on Drugs'.

Buy local or at least hand made this year
This year if you are able and need a gift I hope that you will support local and or cottage industry type folks where ever possible. Most of the time folks make very nice items for close to the same price you could buy it in the store. Many times they can make custom items for you as well.
In the last few days I have sold soap, lotion, waterless hand cleaner and now today I got an order to sew three feed sack bags using the customers feed sacks.
These sales encourage me that people value hand crafted products made in America.

Letter to the editor~Hallettsville Tribune~Hearld
I just read this to the editor in the Hallettsville Tribune-Hearald
To the person or persons responsible for maintaining the west end of Lavaca County Road 132, otherwise known as Rickman Chapel Road, I 'll make this short and sweet.
Due to the pathetic upkeep of this well traveled gravel trail and the obvious fact that you dont have to destroy your vehicle just to get home....... may the fleas of a thousand camels infest your underwear and may your arms be too short to scratch them.

This is Mollie and her best friend Destiny. Mollie and Destiny are both home schooled so are able to visit for a couple weeks at a time during the school year. They are studying for their SAT's together and then doing their own school work.They went outside and took pictures today. This is my favorite one of the both of them.

My Etsy store
I added about a dozen new items to my Etsy store this evening after church. Come, check it out. Please encourage your friends to buy home made and hand made items for any gifts they need. I will be adding new items as I get photographs taken and descriptions made for each item. I am finding this to be a neat way to advertise my hand crafted items. So far I have not sold anything as a result of this Etsy store but I have faith that, that will come.

When Christians banned Christmas
Although many may say that Christmas is for Christians, history shows that instead of embracing the “holiday,” Christians throughout the years have stood against it. Even the very men that founded America fought to outlaw its observance.
In the 1640’s, the English Parliament discussed enacting a ban on Christmas because they believed that it was directly contrary to Christianity. One of the main reasons that the Puritans believed this was because the holiday was a mixture of “pagan revelry” and Catholic mandates. Being strongly against the ways of Catholicism, many Puritans forbade the attendance of mass in England, from which the name “Christmas” was derived.
In 1647, parliament not only passed a law banning Christmas, but also Easter, Whitsun and all of the special “saints” days instituted by the Catholic church.
When the Puritans (also known as pilgrims) came to America on the Mayflower, they carried with them a desire to worship God in spirit and in truth, and to reject the ways of England. They continued to stand against the mandates of the Vatican, which they viewed as idolatrous. They also despised the way that many celebrated the Vatican-mandated holiday of Christmas by indulging in all sorts of drinking and gluttonous feasting. The Puritans believed these acts blasphemed the name of Christ.

DIXON, 4.4 lbs (2kg) at 4 months and fighting for his life.
On Thursday, a malnourished mother from Ntete village, 6 miles away, came to beg help for her baby.
The cloth bundle she held in her arms was nothing but a skeleton with big black eyes.
When Little Dixon looked at me, I knew we had a real fighter who stood a chance if we acted fast.
Most babies who had suffered starvation as he had, would not have been alert, much less responsive enough to eat.
I grabbed a baby bottle and Dixon sucked with glee.
He then gave me a HUGE CROOKED SMILE that made all of us laugh.
Eric was there with camera in hand, catching his expressions of contentment as this was the first full tummy he’d had in a long time.
Not a peep did he utter, he just kept smiling and looking around.
I found his mental status amazing, considering the malnourished state of his little body.
One phone call to the Balama Doctor, and Dixon was given emergency admittance to the children’s ward for 30 days of intense nutritional help.
But the mother said she couldn’t stay in the hospital with him for 30 days as she had 4 other children at her mud hut in Ntete who had no food.
So within an hour, BBB and staff organized a baby sitter to stay with Dixon in the hospital, sacked up a week’s worth of food to sustain the 4 older children , and drove this mother to Ntete so she could find a neighbour to watch over her family for the next month.
Dixon’s situation is not an isolated case. Many infants perish because the mother’s breast milk dries up from malnutrition.
They feel hopeless as there is no government agency that gives this type of help.
Someone told her about us, so she walked the 6 miles hoping to save her baby.
This family was surviving on tree leaves and cassava root, the same food that caused malnutrition in Jacinto.
Casava fills the belly and stops hunger pains, but it is an empty carbohydrate with absolutely NO nutritional value.
Most of Africa lives on it as this plant is very tough, surviving droughts, floods, and high winds. It’s leaves are very nutritious and tasty.
But the root, which everyone dries and eats as their “starvation food”, will lead an adult to the grave in 3-4 months if that is all they have to eat.
Dixon has a long road back to health, but he is one tough little boy and holding his own after 3 days in hospital.

JACINTO ON THE MEND
Jacinto walked with steady, strong steps to our church today (he lives 200 yards away).
This is a great improvement over last week when he could hardly walk at all.
The food and vitamins are giving him strength, and he proudly showed me his new clothes.
A special gift was given this week to provide Jacinto with a special high protein diet that will speed his recovery.
He lifted his hands in church and praised the Lord today with all the rest of us.
We received a new family into the church who walked about 10 miles to get there.
Pastor Tomas explained the gospel to them this week, and they asked Jesus to be their Lord and Savior today.
AN ACT OF KINDNESS BRINGS A WOMAN TO CHRIST
The wife of the man who dumped the alcohol several weeks ago was adamant that she wanted nothing to do with Jesus.
Last week, her husband begged me to come to his house to pray for his sick baby.
The mother had taken the baby to the witchdoctor repeatedly, so I expected trouble.
But she’d left the baby with her daughter, and gone to the mill to grind her corn.
We prayed for the baby and was just finishing up when she walked up.
She said nothing, just glared at me.
The baby has mild Hydrocephalus. (an inability to drain excess brain fluids from the outer lining of the brain, so the head enlarges)
They’d taken the baby to several hospitals, but no one could do anything about it since brain surgery is not possible here.
After our visit, the swelling of the baby’s head shows no outward signs of diminishing, but the baby is better.
Seeing her baby better after our prayer touched this woman’s heart and today she gave her life to Jesus.
We’ll keep you informed of the baby’s progress.
FIRST LADY OF MOZAMBIQUE TO VISIT OUR ORPHANS IN MELUCO DISTRICT THIS WEEK
Next weekend, there may be a delay in getting my weekly blog to you, as I will be in Meluco from Friday to Sunday. (6 hour drive northeast of Balama)
The President’s wife wants to visit our program there and has requested my attendance.
So expect to hear from me as soon as I return.
Keep us in your prayers as we will be tenting in Meluco. The mosquitos are hungry and I’m going armed with DEET!

missionary update

AN UPDATE ON A FEW HAPPENINGS THIS WEEK
Jacinto’s progress:
Many of you wrote in response to Jacinto’s illness.
We visited him again today and he is more energetic after eating well for a week.
He’s on a high protein diet of fish and beans with corn as his starch.
He’s also taking a strong multi vitamin with Iron to rebuild his blood system.
After one week, all the outward signs are the same, swollen feet and blanched eye lid color, but he is ENERGETIC.
In fact, we had to tell him to rest more as his mother says he is walking all over the village because he feels better!
We Praise the Lord for that!
We’ll keep you posted on his progress with each weekly blog.
Since so many of you requested more information about him, I felt I should send this out today.
Some asked if he could speak before we prayed for him.
NO, according to all who were at the church meeting when he spoke his first words (that includes his parents).
Sorry, but I must run as our truck just pulled in from its last food distribution to Meluco District 9 hours drive away.
