Baked spring rolls


6-8 onions (sliced as thin as possible)

1 package rice noodles (soak in water, then snip with kitchen scissors)

3-5 carrots ( grated)

2 # ground turkey or sausage

2 egg yolks (save the white to seal the wrappers)

3-8 bulbs garlic (minced)

1/3 c. sugar

Mix in a large bowl with your hands, try to get it mixed well.Place a spoonful into a spring roll wrapper. Use the egg white to seal it closed after you wrap it up.

Place on oiled cookie sheet, turn to coat. Bake at 350 degrees until brown. We have always fried these in oil, but I saw somewhere that you can bake these to make them a bit healthier. So I am going to try it.
Mollie is not eating meat right now so I think I will make some for her without the sausage.
