Tonight's menu says chicken enchilada's. I couldn't find the recipe so I kinda winged it and WOW, its a keeper. I better write it down or next time I wont remember what I put in it and why it was so good.
Chicken tacos
1 can chicken meat (or two chicken breasts cooked and cubed)
1 can rotel
1 can cream of mushroom soup
1/2 can water
In a saucepan combine the soup, water and rotel. Add cubed or shredded chicken. Warm over medium heat. Grate some cheese. Serve on warm tortillas and top with cheese. These were so simple and yet so very good.
